1. Amaranth, cabbage and cowpea belong to the “high-risk food for pesticides”. In Changchun City, a survey of pesticide residues conducted by Northeast Normal University from 2000 to 2004 showed that amaranth was the only vegetable that had been on the list of unqualified pesticides for four years. Li Shidong pointed out that the lowest rate of amaranth is mainly related to the vulnerability of the roots to cockroaches. In addition to amaranth, cabbage is also a "high-risk vegetable residue", and its pesticide residues are mainly caused by "infusion". Cowpea also uses a large number of pesticides to control pests, and the application period is generally closer to the picking period. This will cause some mature cowpeas to be sold in the market without the natural decomposition of pesticides, so the pesticide residues are also higher.

2. The detection rate of pesticides in beans, green leaves and solanaceous vegetables is high, and melons and edible fungi are more reassuring. The laboratory of the Agricultural Products Monitoring Center of Yuhang District of Hangzhou City lasted for one year. The results of testing 440,000 vegetable samples showed that the varieties of vegetables were different and the pass rate was different. The order of pass rate from low to high is beans (kidney, bean) <solanth (eggplant) <green leafy vegetables (celery, oily vegetables) <sweet potato root vegetables (potato) <onion garlic (scallions) < melon Class (cucumber, bitter gourd), edible fungi (Pleurotus ostreatus). In the brackets are vegetables with excessive pesticide detection. Among them, aquatic vegetables, wild vegetables, and sprouts are the most reassuring, with a pass rate of 100%. It is worth noting that this rule does not apply to all parts of the country because of differences in the origin of vegetables.

3. From the month of view, the qualified rate of vegetables in June and August was the lowest, and the highest in March. Researchers at the Agricultural Product Quality and Safety Supervision, Inspection and Testing Center of the Ministry of Agriculture found that the over-standard rate of vegetable pesticide residues in the whole year increased first and then decreased with the passage of time. In March, the vegetable pesticide residue rate was the lowest, the highest in June, the second highest in August, and the second time in November. This is almost similar to many other studies in China. Li Shidong pointed out that the ups and downs of this intuitive curve are also mixed with many variables, such as climate change and serious summer pests and diseases.

4. Vegetables in supermarkets are not necessarily safer than farmers' markets. From December 2007 to September 2008, a test result of nearly 40,000 samples of organophosphorus pesticide residues in vegetable samples in Changsha showed that the pass rate of vegetable pesticide residues from 22 farmer's markets was higher than that of 26 supermarkets. high. The research team speculated that the vegetables in the supermarket mainly come from the designated vegetable production base, paying attention to the appearance quality of the vegetables, and the pesticide application rate may be higher than the small-scale self-produced vegetables of the farmer. Finally, it should be noted that although many vegetables have been detected to exceed the standard of pesticides, the comprehensive rate of vegetable disability in the country is above 90%, such as the above mentioned 440,000 vegetables. The pass rate of the test was 99.91%. After proper handling, everyone can eat vegetarian food.
